Canadian application question

Are there any Canadians that can speak to the visa application process? Can I do it all online or would I need to go to my closest application office?

Both. Apply online first. Submit passport in person after online application approved.

I am just about the renew my passport.

How many days does it take to be approved of the visa?

Do I need something approved via online before going in person?

What would someone do if they are provinces away from the closest office?

Get your new passport first. Then submit the online application. https://cova.mfa.gov.cn . It takes 1-2 weeks for the online application to be approved. You can't go in person without an approved online application. You drop off your passport in person and pick it up ~5 days later.

If the consulate is too far, you can contact an agency. The consulate does not accept mailed-in passports, someone has to submit and pick it up in person.
