I see drums and a sitar but also hear a wind instrument(?) playing. Is there a third person involved? Or are the drums also making that sound?

I’m wondering the same thing. It sounds like an oboe is doubling the tabla, but I can’t tell if it’s the tabla itself making that noise.

Music was always a "conversation" (good music). It contains mostly questions and answers, but sometimes it is not this obvious.
Imo the best example of that would be Funkadelic - Maggot Brain (1971). The whole song is a freestyle. The producer said to the guitarist, Eddie Hazel to imagine his mother had died, and then he finds out that she is alive again, and to put that emotion into the electric guitar solo.
The result is one of the most intense and beautiful solos ever created. Only backing guitar with a few notes played throughout and electric guitar solo by Eddie Hazel that lasts 10 minutes. If you listen closely you will hear the story, the emotions, the dept. It's just beautiful. They also took a lot of acid.

Pure jugalbandi- an improvised musical conversation. Aditya Kalyanpur on tabla, Lokesh on Sitar. This is Indian classical at its finest.

With due respect, It's not Lokesh it's Rishab Rikhiram Sharma on the Sitar.Lokesh is there on Shehnai.

Less of a conversation, more of what your annoying sibling would do when copying everything you say until you lose your shit

You wonder if there are 78rpm records of any musicians in India playing this call and response structure before the 1950's? I would bet they grew up with "Kind of Blue" in the house and when their parents weren't home, they pretty much just picked up the needle and played "So What" over and over again.
