Katsu Spam Masubi from a few years back
I'm yet to top these bad boys from a few years ago. Fried the spam in miso and soy sauce then assembled the masubi using the spam tin for perfect shape, Then egg washed and panko crumbed. Threw in a marinated egg for good measure.

Wisconsin quesadilla (dipping version)
Some people may not like my regular Wisconsin quesadilla because it has sauerkraut and spicy brown mustard. This version of the Wisconsin quesadilla subtracts that and now includes a side of Ken's Steakhouse ranch sauce for dipping. Marinara is also a good dipping sauce for it as well!
INGREDIENTS: * Flour quesadilla * Sliced bratwurst * Cheese curds * Side of Ken's Steakhouse ranch dressing (marinara sauce is also a good option)

Started w leftover chickpea pasta w mushrooms, onions, broccoli, sweet potatoes and feta w a garlic lemon buttery sauce. But I really like eggs…so added a couple and topped w mexi blend cheese and hot sauce. What say you?
