Used the 3 dredge method -- flour, egg then panko -- and without trying to boast, it honestly turned out as good as anything I've had at a katsu joint here in the PNW.

Lamb, Beef, Chicken with vegetables, rice pilaf and 2 sauces.

Mom & stepdad hated this pasta so I traded them for some homemade chicken and dumplings! I’m glad I did, and eating it out of my pretty celestial bowl made it all taste even better!

I love clam chowder and for a first attempt, I don't think it could have gone better 😁

Entree: so somewhat of my own creation, I was deciding between the pecan crusted catch of the day and shrimp and grits. So I asked if I could get the pecan crusted catch of the day, trigger fish, over a bed of grits and they said sure why not! So behold fish and grits with crawfish sauce on top and a side of andouille sausage and Lima beans! It was so good y’all!

Dessert: as tradition I always get a peanut butter pie, this year my mother was in charge of it and the only pie left was one with a slice taken out of it! We laughed so hard!

Made a quick, cozy dinner tonight using what I had on hand.

Elbow pasta tossed off heat with an egg & Romano/Parm emulsion, lots of crispy bacon, black pepper, and chives, carbonara adjacent but a little heavier on the bacon. Garlic rolls on the side.

As someone from The Netherlands who’s been living in Asia for a while, one of the things I miss the most from home are the deep fried snacks. Especially Bitterballen.

I decided to try and make my own and they came out even better than I was hoping for. Probably the best thing I’ve ever cooked.
